2 cups Bisquick
2/3 cup milk
2 whole eggs
1 cup maple syrup
1/2 cup creamy peanut butter
(optional) chocolate chips
1 Preheat oven to 350 degrees and line a cupcake pan with 12 liners.
2 in a medium bowl add the Bisquick, milk, eggs, syrup, and peanut butter and mix until combined.
3 Pour into cupcake liners filling about 3/4 of the way.
4 If desired sprinkle with chocolate chips.
5 Bake for 14-15 minutes or until toothpick comes out clean.
6 Serve by itself or with additional maple syrup.
*** NOTE: For mini pancake muffins spray a mini muffin tin with cooking spray and fill muffin tins. Bake at 350 degrees for 8-10 minutes.
